1 lemon, cut in half
1 clove garlic, minced
1 tsp salt
1/3 cup olive oil, approx.
1 tsp chopped fresh thyme or oregano
Use this dressing on a green Salvador, for a fabulous Greek potato salad, toss with 2 il. roasted potatoes. Grilling softens the lemon taste.
Place cut sides of lemon halves on a hot barbecue or grill pan. Grill for a couple of minutes, or until lemon is well browned. Cool.
Squeeze lemon juice into a bowl. Whisk in garlic and salt. Whisk in oil and thyme. Taste and adjust seasonings if necessary.
